Another family recipe


I haven't done a recipe in awhile.

I don't know why.

Maybe because I've been dieting and by the time dinner is ready to eat I want to shove it in my face, instead of taking a picture?

Probably ;)

Oh and by dieting, I mean not eating as much.

I am not a fad dieter.

Anywho...


Chicken Pineapple Casserole has been in my mom's recipe box since the 1970s as far as I know.

She says she got it from her sister, but for whatever reason, my aunt claims she never made anything this fattening, so it's a mystery as to where it came from, but it's usually made for a girl's night in, watching something fun like the Oscar's (Academy Awards).

Weird fact... 99% of men hate it.

Just like they hate award shows and the red carpet.

Anyway, here it is before it's baked.

I guess I was in a hurry.

Just a warning for all you purists (which I usually am too)... it's an old recipe and I've learned the hard way that if you mess with them, they don't taste the same.

So, mess with it at your own risk.

Basically, this is mostly a one bowl and two casserole dishes (although you could make it one if you use the same one to cook the chicken) dinner, now that I've gotten my hands on it.

First, bake about three or four (if small) breasts of chicken, with olive oil, salt and pepper, at 350 degrees for 40 minutes. Then shred or cut it up and put it in a large bowl.

Preheat or turn down the oven to 325.

Then cut up and throw in a couple stalks of celery in the same bowl with the chicken and add 1/3 cup Catalina dressing, two small bags of slivered almonds, 1 1/2 cups sour cream, a 1/2 teaspoon mustard, 1 teaspoon salt, 20 oz can pineapple chunks drained, and about 1 1/2 cups of grated sharp cheddar cheese (I hand grate mine). Then stir together and put in a 9x13 inch casserole dish.



In the same bowl, mix together one bag of crushed Ruffles potato chips and 1 1/2 cups of sharp cheddar cheese and spread on top.


Put it in the oven for 45 minutes.

And these are all the dishes you'll end up with aside from the plates and silverware.


Easy peasy, right?

  3. Good morning Rue! I have not yet received notification of this post yet, but I saw you went to my post, and I thank you for visiting! NOW, for this recipe!

    This looks like some of the "hot dishes" for which Minnesota is famous! I did not grow up here (I was born and raised in Los Angeles and the grew up in Boston, Mass.) so these a-meal-in-a-pan recipes are ever so familiar! You are reminding me of the great recipes my mother had from the 50s to 60s. I wish I still had the plastic box she got after collecting Betty Crocker recipe cards....the illustrations alone on those recipe cards in themselves are a piece of 1960s art. I remember especially the baked items.

  4. Well, I guess you're right! I was reading this, thinking it sounded different and delicious, and my husband has to come along and ruin the parade. He doesn't agree with me. LOL. Maybe I'll tuck this one away for a girls night, because I'm going to make this at some point! :)

  5. That is too funny that you said guys don't like it. My husband hates pineapple in savory dishes. I love this Hawaiian chicken dish that is full of peppers, soy sauce and chunks of pineapple, he cringes when I make it. He has been working a lot lately,so the little guy and I might have to try it while he's not around for dinner!

  6. Pineapple and potato chips, huh? I have never heard of a dish that combines those two yummies. I may have to give this a try...if I don't eat all the chips before they make it into the bowl. ;)

  7. This sound's and look's delish !! I'm going to try it out on my 17 year old son , he actually like's pineapple and it look's to be enough for leftover's. I have the same yellow Pyrex bowl that I recently picked up at an Amish garage sale for $1.00. Not a scratch on it. It's the perfect size, not too big , not too small.     Mikey- remember Mikey well, and it's funny b/c not a day goes by where I don't use it = I married a finicky Mikey, whose name happens to BE Mike..............so, he loves chicken and pineapple but hates potatoes and isn't a fan of casseroles, but maybe if I tried this making a much smaller version he'd give it a try. To be continued.............

  12. Is it really bad that I was more interested in the yellow pyrex bowl! I love that!!! Sorry, back to the food! Sounds great to me, but yes, definitely more of a girl dish than a boy one. Which is good because it means more for the girls!!! xx

  17. Sorry, Rue...this is one recipe I'll have to pass on. I'm a food purist and eat clean...no bottled dressings or Ruffles potato chips for me. I don't like awards shows either. What in the world are you going to do with me?! Please, please don't hate me and keep me as a friend anyway. ;-)

    I remember how potato chips were the rage in casseroles when I was growing up, they were tasty indeed. But I too will have to pass as I am walking way too many miles a day and watching calories.

  19. Rue, I still make tuna casserole about once a year and use crushed dill pickle chips with cheese on top. I make 3 casseroles when I make it, with two going to two sons. And my men would love pineapple in the chicken casserole! It's kind of like a Sweet & Sour Chicken recipe that we love. Now when I make any casserole dish with cheese in it, I have to make one with goat cheese for my lactose intolerant husband.

    I love that marvelous sink of yours!

  26. The hubster would love this recipe....once we get moved and settled, I will give it a try. We've eaten our last cooked meal for about the next 3 weeks...it is takeout from now on...LOL....unless I just get a wild urge to cook after days of packing! :-)

    i love most any casserole. i like my food all thrown together. and... anything with cheese or gravy on it. i'll eat it.
    i haven't got a sophisticated tooth in my head. i mean my mouth.
    i have suddenly just taken the tone of this beautiful blog down to the level of hillbilly sal.
    but.
    i live alone. if i made that... i'd either have to eat it for two weeks straight. or freeze it. and i'm not sure the chips would translate.
    and i wouldn't want to make it without them.
    i love chips either on or with almost anything. they're especially good with ice cream. but i digress. back to the casserole...
    so... i'll admire from afar.
    well. now.
    do you want the TRUTH?
    i would eat the whole thing myself. and it wouldn't take me two weeks to do it either. i figure on a good night if i stayed up long enough....

  28. This sounds tasty, Rue! I love pineapples so I know I'd love the flavor. I've been on a low carb diet this month on doctor's orders as my triglycerides were elevated on my last visit and my doctor wants to check them again.. It is a killer diet for me as I LOVE pasta and potatoes and rice and all things carb, but I'm sticking to it.for my health. I only allow myself to eat carbs one day a week, and then in moderation. PS: I also love LIFE cereal and I've always liked Mikey--lol!

  29. That is a very 60s/70s sounding recipe, all right. It reminds me of when Mr. B and I were newly a couple in the late 70s. I was a working mother with five young children and always glad to eat anything someone else cooked. It didn't dawn on me that my mother relied heavily on a standard "company" recipe until Mr. B asked me once "Doesn't your mother know how to cook anything except King Ranch Chicken?". It made me laugh. Yes, she did, but no, she didn't really enjoy cooking much at all.

  30. The slivered almonds made me smile. As a kid in the 70's I spent many a dinner picking out the slivered almonds or water chestnuts my mom added to casseroles "just for crunch".
    This one looks good and I'm in the fortunate position of it not being too much for my crew. I WILL add the almonds and enjoy them and laugh at my 6 yo self.

    I used to make a chicken with toasted almonds and sour cream sauce casserole back in the day.
    Now I am grazing on lettuce ;)
